Chef Lynn Archer, from the Brass Compass Cafe and Archer's on the Pier in Rockland, shares a recipe that'll help you get rid of some of that spring garden.

Mix together:

  • 1&1/2 cups brown sugar
  • 1 egg
  • 1 cup milk
  • 2 tbls vinegar
  • 1 tsp vanilla

Then add:

  • 2&1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 2 1/2 cups rhubarb

Pour into 2 greased or sprayed loaf pans.

Top with:

  • 1/2 cup sugar (Lynn uses brown)
  • 2 tbls cinnamon
  • 2 tbls soft butter

Crumble over the top. Bake 350 for 1 hour...have the greatest of days!
