OLYMPIAN MICHAEL PHELPS
Michael Phelps has won more medals than any other Olympian. We caught up with him at the Michael Phelps Skill Center in Saco, ME.
The core of the Michael Phelps Skill Center lies within its industry-leading curriculum - Michael Phelps Swimming - that has been developed and enhanced over the course of 30 years. Michael Phelps Swimming (MPS) is a world-class curriculum of swim classes and clinics that includes stroke development & refinement, elite coaching, personal safety, learn-to-swim, water sports & games. The top priority of the Michael Phelps Swimming program is to insure that each participant has an opportunity to achieve his or her goals, whether a novice, accomplished swimmer, or elite.
Michael Phelps Swimming was originally launched under North Baltimore Swim School (NBSS) in the early 1980's led by Cathy Bennett (formerly Lears). Bennett, who holds a Masters in early childhood development and education, developed a learn-to-swim program that focused on building comfort, confidence and a feeling for the water in each child. One of her first students was Michael Phelps, who at a young age did not like to get his face wet so she first built his comfort and confidence in the water while on his back.
Over the years, the program has evolved to provide world-class instruction to swimmers of all ages and abilities.

Chef Kevin Cunningham's Apple Walnut Chicken Salad
1 lb. Chicken Breasts
2 Apples, peeled, cored and diced
1 tsp. Celery Salt
2 tsp. Cajun Spice
3/4 cup Walnuts, finely chopped
3/4 cup Celery, finely diced
1/3 cup Onion, finely diced
1 cup Mayonaisse
2 tsp. Brown Sugar
Salt and Pepper as needed
1. Season chicken breasts with salt and pepper and pan sear or grill them until just done in the center. Make sure you don't overcook - they should be very juicy. Refrigerate until fully cooled.
2. Once cooled, dice the chicken and place in a large bowl.
3. Add remaining ingredients except for the Mayo.
4. Mix well to make sure all your ingredients are well coated.
5. Add in half of the mayo and mix. You can add more may as needed. If the chicken and apples are juicy you will only need half. Add more mayo as needed until you have reached a good constancy.
6. Refrigerate until you are ready to serve. Make sure to mix well before you serve.
You can substitute some or all of the white chicken meat with dark if you prefer.
Any kind of fresh local apple will do but I prefer Red Delicious.
This salad is better served the next day as the flavors have some time to blend together.

SHASHASHA TO PERFORM AT PORT CITY MUSIC HALL
ShaShaSha began last fall after Dominic Lavoie recorded a solo album by the same name, enlisting friends and Portland musician staples as a backing band for the album release show. What was to be a one off show, morphed into a cohesive band, continuing to rehearse regularly and write new material. After recording throughout the spring, ShaShaSha is releasing their first EP, 'VanDyke Brown' recorded with Adam Jackson at The Studio in Portland.
The band features the song-writing of Dominic Lavoie (Dominic and The Lucid), with Dan Capaldi (Sea Level), Pete Genova (Model Airplane), Scott Mohler (Dominic and The Lucid, Penny Arcade), Kyle Gervais (Cosades, Grand Hotel, KGFreeze), Charles Gagne (Dominic and The Lucid), and Justin Wiley (Dreamosaic).
ShaShaSha will be in concert at Port City Music hall on Friday, August 23rd. Doors open at 8 PM.
