Bread Pudding
PORTLAND (NEWS CENTER) -- Po Boys and Pickles out of Portland stopped in this morning to share some traditional New Orleans recipes with us to celebrate Mardi Gras.
Mardi Gras is French for Fat Tuesday and the celebrations in New Orleans can be some of the craziest and colorful! The tradition is to eat as many fatty foods as possible before lent begins on Ash Wednesday.
Two popular dishes are sausage po boys and bread pudding. Po Boys and Pickles make their dishes by hand and serve their delicious food at their restaurant right on Forest Ave. The menu consists of a huge array of po boys, including their twist on a muffaletta, and of course the classic gumbo!

Bread Pudding:
1 pint whole milk
1 pint heavy cream
3/4 cup sugar
1 Tbsp vanilla
5 egg yolks
2 whole eggs
1 tsp cinnamon
1 tsp nutmeg
1 cup dark rum soaked raisins
1 cup dark chocolate chips
2 quarts of diced bread cubes, about 1/2 inch square
Make the custard by whisking milk, cream, sugar, eggs, vanilla, cinnamon, & nutmeg. Pour over bread, chocolate, & raisins in an oven-proof dish. Bake for 45 minutes at 300'f. Serve warm.
Fresh Sausage:
2 lbs ground pork shoulder
2 cups pureed roasted peppers and onions
2Tbsp pureed roasted garlic
2Tbsp cajun seasoning
1/3 cup brown sugar
2Tbsp red vine vinegar
2tsp ground fennel seeds
3T salt
2tsp black pepper
2tsp cayenne pepper
Mix well and form into patties, cook in a pan until browned on the outside and cooked through in the middle. Serve on crusty bad with lettuce, tomato, and mayonnaise.
