207 Cornish Apple Festival Krista Lair Apple Stuffed Pork Loin
The Cornish Association of Businesses is sponsoring the 21st annual Cornish Apple Festival on Saturday, September 25th. The free festival will be held from 9 AM to 4:30 PM in the center of Cornish village in Thompson park. More than 55 vendors will be selling art, photography, crafts and apple and non-apple foods. There will also be an apple pie baking contest and 5K road race.

Krista Lair's Stuffed Pork Loin with Apple Cider Reduction

2.3 - 3 lb pork loin
6 or so pieces of prosciutto
1.5 cups of grated smoked gouda
couple sprigs sage or thyme
2 med apples, peeled and chopped
3 lengths of cooking twine
salt, pepper, chopped garlic
1 cup white wine
1 cup Apple Acres Farm cider syrup
Preheat oven to 350. Butterfly the pork loin (your butcher can do this too!). Spread prosciutto, smoked gouda, sage OR thyme, chopped apples on pork. Roll up carefully, stuffing any escapees back inside the ends. Tie ends and middle with twine. Sprinkle with salt, pepper and chopped garlic. Add wine and cider syrup. Roast away for about 45 minutes. After roast is complete, remove from pan and reduce sauce to about 3/4 its volume on medium heat, whisk in a couple tablespoons of butter. Remove twine from roast, slice about half inch pieces and serve with your reduction.
