PORTLAND, Maine (NEWS CENTER)-- While many people were finishing up their Thanksgiving preparations Wednesday, the folks in the baking business were working overtime.
The staff at Standard Baking Company have been providing baked goods to the community for 22 Thanksgivings. Some staff members there refer to Thanksgiving eve as “Black Wednesday” because it is arguably the busiest day of the year, only rivaled by Christmas Eve.
With more than 200 orders to fill, the process is stretched across two days with the second spanning an entire 24 period with nonstop staffing. On Monday alone, the staff mixed 3,000 pounds of bread dough. In this situation, patience is the main ingredient.
However, owner Alison Pray says what makes all the hard work worth it is seeing a line of customers stretch from the door, through the parking lot long before the doors even open.
