Whole Foods Market's Classic Cioppino

This flavorful soup is perfect for this time of year! Crusty bread, a chunk of Paeve, a hard, nutty cheese, and a simple salad creates a fantastic meal to serve to family and friends.
·1 tablespoon 365 Everyday Value Extra Virgin Olive Oil
·3 slices 365 Everyday Value Smokehouse Bacon, diced
·1 365 Organic Everyday Value Yellow Onion, chopped
·2 cloves 365 Organic Everyday Value fresh Garlic, minced
·1 (28 ounce) can 365 Organic Everyday Value Diced Tomatoes
·1 (32 ounce) carton 365 Organic Everyday Value Vegetable Broth
·1 bag fresh Maine mussels (about 1 ½ to 2 lbs), scrubbed
·1 (12 ounce) package Whole Catch Cod Fillets, cut into bite-sized chunks
·1 TB 365 Everyday Value Mediterranean Seafood Seasoning
·2 TB chopped fresh basil
Heat oil and bacon over medium-high heat in a large saucepan until bacon is cooked, but not crispy.
Add onion and garlic; sauté until softened and lightly colored, about 5 minutes. Add tomatoes and vegetable broth; simmer 20 minutes, uncovered, until slightly reduced.
Add fish, mussels, and seasoning; gently combine. Simmer gently 10-15 minutes, until fish flakes easily when tested with a fork and mussels are opened.
Be careful not to overcook. Ladle into bowls and garnish with basil.
