Amy Bouchard's Eggnog Coffee Cake Recipe
1 cup granulated sugar
1/2 cup softened butter
1 cup eggnog
1 cup sour cream
1 teaspoon rum extract or vanilla
2 whole eggs
2 egg whites
2 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
1/3 cup granulated sugar
1/3 cup Brown sugar
4 tablespoons flour
4 tablespoon butter
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/2 cups powdered sugar
2 tablespoons melted butter
3-5 tablespoons Eggnog
Preheat oven to 350 degrees.
Grease 13x9x2 pan with shortening or line with parchment paper.
In a small bowl mix all the Streusel Topping ingredients until crumbly; set aside.
In a large bowl mix sugar and butter until fluffy. Beat in Eggnog, sour cream, extract, eggs and egg whites until well blended. Add flour, baking powder,
baking soda and salt until well blended. Spread into pan and sprinkle Streusel Topping over the batter. Bake 35- 40 minutes, until toothpick comes out clean when inserted.
In a small bowl mix all Eggnog Glaze ingredients until smooth and thin enough to drizzle. Drizzle over cooled coffee cake. ENJOY!
