Amy Bouchard's Apple-Date Swirl Cookies
1 1/2 cups chopped dates
1 cup chopped peeled apples
1/4 cup granulated sugar
1/3 cup orange juice
1 tablespoon grated orange peel
Cook over medium-high heat in a saucepan. Stir constantly until boils and thickens about 5 minutes. Cool.
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup butter
1 tablespoon vanilla
1 large egg
1 2/3 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
In a large bowl mix sugars, butter, vanilla and egg until well blended. Stir in flour, baking soda, salt and cinnamon.
Between sheets of wax or plastic wrap, roll or pat dough into a 16x8 rectangle, or close to it. Spread cooled filling over the dough.
Roll up dough w/filling inside starting with the wider side, using the wax paper to lift and roll. wrap tightly.
Refrigerate 2-3 hours or overnight.
Heat oven to 375 degrees. Cut roll with sharp knife into 1/4 inch slices.
On parchment lined or ungreased cookie sheet place 1 inch apart. Bake 8 to 11 minutes, until lightly browned. Enjoy!!
