Greek Stuffed Chicken Breast
Kalamata Olives
Spinach
Feta Cheese
Chicken Breast (one per person)
Chop up the olives and spinach and place in a bowl. Top with feta cheese and mix thoroughly.
Butterfly the chicken breast. Tenderize the chicken placing a ziploc bag over the top and pounding with a meat tenderizer.
Place stuffing mix on one side of butterflied breast. Gently fold over. Bake on an oil covered pan at 400 degrees for about 20-40 minutes. When chicken is about halfway done, drizzle more oil over the top to keep it moist.
*Note - the recipe works out to feed about one chicken breast to a person. Use the olives, spinach and feta to your tasting.
Squash Stir Fry
Summer Squash
Zucchini
Greek Dressing (oil and vinegar based)
Feta Cheese
Grape Tomatoes - one package
Red Pepper Flakes (for a spicier taste)
Cut off end of each squash and slice length-wise down the middle. Then chop into approximately 1" pieces.
Coat with dressing and red pepper flakes.
Cook over medium heat. When squash starts to brown along the edges, add feta (to your taste) and the tomatoes. Mix well to coat everything with dressing and spice. Cook for just a few minutes longer.
To round out the meal, add some cous cous or your preferred kind of rice!
