Blue Cheese Burgers and Spicy Southwestern Tabbouleh salad

OLD ORCHARD BEACH, Maine (NEWS CENTER) -- As a tribute to summer, we're grilling burgers in Old Orchard Beach with Captain Brett Jones.  He has an original recipe for blue cheese burgers, and shares his wife's mixture for a spicy salad.

Burger Ingredients (serves 4-6):

3 lbs of 85% lean hamburger
1 6oz container of crumbled blue cheese
4-5 cloves of garlic finely chopped

Mix burger, blue cheese and garlic in a bowl, mix throughly.
Form the patties approximately 1/3 to 1/2 pound each.
Start the grill on hot heat, then turn it down to medium to put the burgers on.  Keep the grill cover open to prevent flare-ups.  Cook to desired temperature (medium is prefered to cook the garlic.)

Salad Ingredients (serves 4-6):


3/4 cup uncooked bulgur wheat
1 1/4 cups boiling water
1 1/2 teaspoons extra-virgin olive oil
1 cup of vertically sliced red onions
2 Roma tomatos diced
1/2  cup of sliced green onions or scallions
1/2 cup diced yellow pepper
1 peeled and chopped avocado
1 large peeled and chopped cucumber
1/4 to 1/2 cup of crumbled Feta cheese
1/4 cup of extra-virgin olive oil
1 fresh squeezed lemon
1 fresh squeezed lime
1/2 of 1 diced seeded jalapeno pepper
3/4 teaspoon dried oregano
1/2 teaspoon of salt
1/4 teaspoon ground cumin
1/4 teaspoon ground red pepper
1/4 teaspoon paprika
1/4 teaspoon chili powder
1/4 teaspoon of ground black pepper
2-3 cloves of garlic,minced
1 shot of hot sauce (Sriracha or Frank's Redhot)

Combine bulgur, 1 1/4 cups boiling water, and 1 1/2 teaspoons oil in a medium bowl; cover and let stand 20 minutes.  Drain bulgur and place in a large bowl. Add all remaining ingredients, toss well, and serve chilled with pita chips.
