PORTLAND, Maine (NEWS CENTER) -- Firefighter, Chris Vail, shows NEWS CENTER his take on a Mexican/Italian mix-dish called Mexican Lasagna.
Ingredients:
3lbs Ground Beef
1lb Hot Sausage
Red Hot (As much as your taste buds prefer)
2 Large Onions
4 - 5 Cloves of Garlic
2 Large Green Peppers
4-5 Small Hot Peppers of your Choice (Jalapeño, Habanero, Etc.)
Dash of Cumin, Paprika, Cayenne, Thyme, Oregano, Chili Powder
2 - 28oz Cans of Crushed Tomato
2 Cans of Black Olives
2 - 4 Cups of Shredded Cheese (Mexican Blend or Cheddar)
Tortilla Wraps
Sides:
Sour Cream
Guacamole
Salsa
How to Prepare:
Step 1:
In large skillet add Beef, Sausage and Red Hot and simmer until cooked. Drain and set to the side. About 20-30 minutes low heat.
Step 2:
In large skillet add onions, garlic, green peppers, hot peppers, spices, crushed tomato, olives and simmer until cooked. About 20-30 minutes low heat.
Step 3:
Cut your wraps to square with your pan and use to layer as you would in an Italian Lasagna pan.
Step 4:
Layer all of your ingredients evenly between meat, veggies & spices, cheese and wraps. Allow for your top layer to finish with melted cheese and veggies.
Step 5:
Bake in over between 350-400 for about 30 minutes covered and 10 minutes uncovered. All of the ingredients have been cooked, so you just want the layers to melt and blend into a nice Mexican Lasagna!
