Italian Pasta

SACO (NEWS CENTER) -- Lt. Steve Kerner with the Saco Fire Department shares his version of Italian Pasta!

Ingredients:

1 pkg Italian sausage links

1 stick pepperoni

8oz pkg mushrooms

1 green pepper

1 onion

3 cloves garlic

28oz can diced tomatoes

Italian seasoning, or a mixture of basil, oregano, marjoram and sage

Olive Oil

 

Directions:

Heat oil in skillet, on medium heat.  Cut a slit in each sausage link and peel off the skin.  Ground it up into the pan and let cook.

Chop the pepper and onion into bit sized pieces and finely chop the garlic.  (Jarred minced garlic can be used instead.)  Heat oil in a separate skillet from the sausage.  Add the onion and garlic first and let cook for a few minutes.  Then add the pepper.  Once the onions are near translucent, add the mushrooms and cook until lightly browned.

While those ingredients are cooking, cook the spaghetti according to package directions.

Then add the pepperoni, tomatoes and cooked sausage to the pepper, onion, garlic and mushroom.  Sprinkle in the Italian seasoning and let cook.

Serve over the pasta.

A perfect side to this meal is a fresh salad and garlic bread to dip into the sauce.  Red wine also complements the meal very well.
