NANCY ZHOU'S COLD NOODLES WITH SESAME SAUCE
Nancy Zhou is the owner of Bubble Maineia, a Taiwanese and Chinese restaurant in Portland. Bubble Maineia will be taking part in the Chinese and American Friendship Association Chinese New Year Celebration at Westbrook Middle School and Performing Arts Center on Saturday, February 4th.

Cold Noodles with Sesame sauce
Ingredients:
1 Bottle (12oz) sesame paste
2 Cup Water
2 T Black Vinegar
½ Cup Vegetarian Oyster Sauce
¼ Cup Sugar
1 T Chili Oil
1 Cucumber
1 Lettuce
1 Carrot
1 pound Long pasta like spaghetti, or linguine or Chinese egg noodles
Directions:
Cook the noodle in about 5 quarts of boiling water until done to taste. Drain immediately and rinse under cold running water until cooled.
In a mixing bowl use a blender or hand mixer, beat the sesame paste with water until fairly smooth. Add Vinegar, Oyster Sauce and Sugar. Beat again until smooth.
Toss shredded cucumber, carrot, lettuce, 1 T chili oil and noodle with sauce.
*Sesame paste is available in Asian grocery stores
Yield: 4 servings
