Julia Clukey shares her recipe for shrimp tacos with watermelon salso and respberry & shaved fennel salad with yogurt lime dressing.
Shrimp tacos with Watermelon salsa
1lb medium raw shrimp, peeled and detailed
2 tbl spoon olive oil
1 tble spoom garlic (fresh or powder)
1 tble spoon chili powder
1 tbl spoon cumin
Combine all ingredients in a large bowl, then let sit and marinade while you prepare salsa.
Two cups diced watermelon ¼ inch cubes
¼ cup chopped cilantro
¼ diced onion (red of white)
2 limes juiced
Combine all ingredients stir and let sit while cooking shrimp.
Cook shrimp over medium heat in frying pan.
Raspberry & shaved fennel salad w/ yogurt/lime dressing
½ fennel thinned very slice (shaved)
1 quart of raspberries
Fresh greens (spinach, lettuce)
Combine all salad ingredients in bowl.
2 Tbsp freshly squeeze lemon juice
2 Tbsp freshly squeezed lime juice
2 Tbsp honey
½ cup plain Greek yogurt
2 Tbsp olive oil
salt & pepper
Easiest to make in blender, but can also stir all ingredients together.
