Kacie Yearout cooks fresh strawberry pie


2 quarts of strawberries

1 pie shell (graham cracker or pastry)

13 oz. cream cheese, softened

1 cup of sugar

2 tbp of corn starch

Cool whip or whipped cream


Clean and slice the strawberries. Divide the strawberries in half, putting one quart to the side. Put the other strawberries in a sauce pan, mash, and then turn the heat the pan. Put in the sugar and corn starch. Bring the mixture to a boil, and then simmer until the strawberry mixture is thick. Pour the mixture into a bowl and let cool for at lest 30 minutes.

Whatever pie shell you choose, bake it. Then take the cream cheese and spread it on the bottom of the pie shell. Use a wet spatula to help spread the cream cheese evenly. Place the sliced strawberries on top of the cream cheese.

Pour the mash strawberry mixture on top of the sliced strawberries in the pie shell. Then, top with cool whip or whipped cream.
